Pierre Gerbais Grains de Celles Extra Brut

The Gerbais family spent eight generations nurturing their vines in the heart of Celles-sur-Ource, in the Côte des Bar. The ‘Grains de Celles’ cuvée is a blend of 50% Pinot Noir, 25% Pinot Blanc and 25% Chardonnay from a selection of the estate’s best plots which consists the same Kimmeridgian soils made of marl and limestone that one finds in Chablis and Sancerre. Aged for 3 years before disgorgement, this Champagne is a wonderful introduction to the South Champagne region.

Dhondt-Grellet Dans un Premier Temps Brut Champagne

To say Adrien Dhondt is a young rising star from the Côte des Blancs might be an understatement as his wines have recently been sought after by the world's best restaurants and drunk by sommeliers on their day off. Since 1986, Adrien and his sister, Alice, have been taking their family estate to a new high with biodynamic viticulture and high quality winemaking. This Champagne is a classic Champenois blend of 50% Chardonnay, 30% Pinot Noir and 20% Pinot Meunier, from their Grand and Premier Cru plots in Cramant, Chouilly and Cuis. It is also worthwhile to note that the base wine is from 2015, with 30% reserve wines from their family solera.

Charles Dufour Bulles de Comptoir #9 “Tradition”

One of the most important figures for organic production in Champagne, Charles Dufour is a true artist. Based in the Côte des Bar in the village of Landreville where he makes most of his wines, he started producing high quality Champagne in 2006, and in 4 years completed full conversion to be certified organic. The Bulles de Comptoir #9 is an assembly of 60% Pinot Noir and 30% Chardonnay with 10% Pinot Blanc from 2018 plus reserve wines. It spent 9 months in barrels, plus 3 months in stainless steel, and another 15 months in bottle on its lees. With less than 4g residual sugar, it features slight oxidation, nice minerality and a floral touch, definitely a Champagne for the discerning palate. 

Maison Gamet Cuvée Caractères  

Making its highly anticipated return to Singapore is Maison Gamet, a small but mighty family-run producer from Mardeuil with annual production below 80,000. Their Cuvée Caractères is likened to that of a family time machine, consisting of reserve wines that have been stored with the Solera method since 1999. Made up of 80% Meunier, 15% Pinot Noir and 5% Chardonnay, the wine is aged in seasoned oak barrels for 45 months before disgorging. On the nose, it is floral, fruity and playful whilst on the mouth, you can taste the minerality, freshness of yellow fruits and a slight oxidation which sets it apart. 

Marie Courtin Résonance, Pinot Noir Extra Brut

Champagne Marie Courtin, a familiar  producer often served in the best restaurants around town, is actually named after winemaker, Dominique Moreau’s grandmother. With a small 2ha plot in Polisot, Aube region, Dominique employs full biodynamic farming techniques and can be classified as a true artisan vigneron in every regard. Her winemaking techniques also reflect that spirit which includes wild fermentation, zero sulfur and zero dosage. This Champagne is a pure expression of terroir, and presents great elegance and tension. We recommend savouring the bottle over a few days to fully enjoy the excellent wine that lies beneath the fizz.

Pertois Lebrun L’extravertie Extra Brut

Based in Cramant, the fifth generation of the Pertois Lebrun family, Clément and Antoine, take great care of their Grand Cru plots with biodynamic farming practices and minimal intervention. The L’extravertie cuvee, translated to mean “extrovert” is a crowd pleaser, and it’s easy to see why. A classical Blanc de Blancs with an elegant golden yellow hue, soft perlage and expressive structure due to part vinification in fut de chene and ageing for at least 48 months.
